
Using ingredients from the Super Foods Peru label, the delectable dishes will be available from 23 November to 18 December 2020
Bangkok, XX November 2020 – Foodies and wanderlusters who miss the sights, sounds and smells of Peru can now embark on a delectable journey through limited-time menus available at two popular city restaurants: Above Eleven and Tortilla Quemada. The special menus will spotlight well-loved staples from the South American country under the Super Foods Peru label.
Available from 23 November to 18 December 2020, the menu at Above Eleven comprises seven Peruvian dishes crafted by Executive Chef Omar Frank Maruy, while Tortilla Quemada’s Chef Colin Stevens has created two dishes for the promotion that is supported by PROMPERÚ, an agency responsible for the promotion of Peru in exports and tourism. The campaign at the two restaurants, pays homage to Peru’s tremendous biodiversity and hugely varied geography, which includes the Pacific coast, mountain ranges and jungles, allowing the country to supply a wide range of top-quality fresh produce all year round.
Asia currently accounts for nine percent of Peruvian food exports worldwide and the number is expected to increase exponentially in the near future. In particular, Thailand is a growth market in the region for Peruvian produce. “Thailand is a major growth market in Asia as Thai consumers appreciate the high quality produce that Peru offers. In addition, both countries have always enjoyed warm bilateral ties. This being the 55th anniversary of diplomatic relations between Peru and Thailand, we are pleased to partner with restaurants like Above Eleven and Tortilla Quemada to promote Peruvian cuisine to a wider audience,” says Erick Aponte, Trade Commissioner of PROMPERÚ for Hong Kong and Southeast Asia.
Both menus highlight the versatility of the nutrient-dense Peruvian quinoa seeds and reflect the handiwork of the two passionate chefs who understand the immense culinary heritage that Peru has to offer.
Above Eleven is the first Peruvian-Japanese rooftop bar and restaurant in South East Asia. It offers diners a little taste of history through the authentically unique Peruvian-Japanese cuisine called ‘Nikkei’, which has existed in the country for over 120 years since the first major wave of Japanese immigration there. Executive Chef Omar Frank Maruy, who helms the kitchen, was born and raised in Lima, before moving to Toronto to study culinary arts at George Brown College. After an illustrious 10-year stint with the award-winning Astrid Y Gaston restaurant in Lima, he moved to Bangkok to introduce food lovers to Nikkei cuisine.
During the campaign, diners can begin their culinary adventure at Above Eleven with Red Quinua Causa (THB280). A hearty mix of mashed potatoes, yellow chilli and lime, it is served with red quinoa tabbouleh, avocado cream, quail egg and red chilli huancaina sauce. Quinua Tamal (THB180) is a corn and quinoa tamale stuffed with a delicious filling of salsa criolla and feta cheese. For mains there is a choice of three dishes and proteins. Lamb is the star of the Black Quinotto and Lamb Seco (THB700). Black quinoa is used to make a sumptuous risotto and served with a slow-cooked lamb shank in yellow chilli, beer and cilantro sauce. For the Chicken Leg Pachamanca (THB450), organic chicken leg is roasted on Kamado grill in a quinoa tamale and comes with a quinoa cobb salad side. Beef with White Quinua (THB700) features beef cheek slow-cooked for 50 hours and quinoa and Parmesan cream. Wash it all down with the popular Peruvian drink, Quinua Carretillera (THB120). For dessert the Quinoa Con Leche (THB250), white quinoa with coconut milk and served with a refreshing mango ice cream will satisfy the sweet tooth.
A veteran of the F&B industry in Thailand for the past 20 years, Chef Colin Stevens divides his time between his popular American-style smokehouse, Ash Kickers, and the delivery-and-takeaway only Tortilla Quemada (or Burnt Tortilla). At the latter he offers tacos, nachos, quesadillas, and burritos with a wide range of meats, homemade salsas and additional fillings made from quality ingredients.
For the promotion, Stevens has created two specials. The TQ Super Bowl (THB310+ VAT) is a quinoa and cacao nib salad with pollo tinga, queso blanco and a jicama & chayote shoot salsa. The second one is Quinoa Con Carnitas Burrito (THB260+ VAT), a soft burrito stuffed with quinoa and pork carnitas, pickled red onions, charred peppers, beans, tomato, lettuce, queso blanco and salsa habanero.
